World’s Largest Navajo Taco Made in New Mexico

What do you get when you combine 150 pieces of fry bread, 65 pounds of ground beef, 65 pounds of beans, 50 pounds of lettuce, 90 pounds of cheese and more than 30 pounds of green chile?   The world’s largest Navajo taco.  As the Associated Press reports, there is currently no world record for Navajo tacos in the Guinness Book of World Records, so, state officials in New Mexico are claiming their giant, 10-feet-in-diameter taco as the biggest.   The taco was created this past Saturday, September 10.

Bill Lee, executive director of the Gallup McKinley County Chamber of Commerce, told the AP, “We just decided we would establish the record. There wasn’t anything on the books officially.”

Lee told the AP that the objective for creating this monster Navajo taco was to highlight tourism in Gallup, a city very close to the Navajo Nation.  Many people pitched in to create this culinary monstrosity, including Gallup Mayor Jackie McKinney. The Mayor needed a cherry picker truck to sprinkle enough diced tomatoes in the taco’s center.
